pizza stone - dough stuck bad

Unknown
edited November -1 in EggHead Forum
We just purchased the BGE pizza stone. There were no directions in the box, so I am assuming there is no "seasoning" of the stone. Anyway, we fired up the BGE last night and the pizza looked and smelled great. HOWEVER, it stuck so back to the stone it ended up being worthless. What did I do wrong?

    Lynda,
Did you preheat your stone? We preheat ours for about 10 minutes. [p]~nikki

    Lynda,
I agree with MIKI, it's probably your pre-heat time. I go even longer than MIKI. It takes a little time for the heat to soak through the stone. If it's hot enough, the pizza will seal almost instantly when you put it on the stone. You also want high heat.... at least 500 and maybe more like 700.

Lynda,[p]In addition to the below posts, I put corn meal on the pizza peel before I put the dough on the peel. It helps the pizza slide off the peel and not stick to the stone...[p]JMO,[p]Ryan

Lynda, I cheat. I place a sheet of aluminum foil in my pizza pan and then spread the dough out on it. I make the pizza and then pull the enire pizza onto the pizza stone. It cooks well and NEVER sticks.

    Lynda,
I use a peel to put the pizza in the egg and take it out, so I put some cornmeal on the peel and then place the pie on the peel. Plenty of cornmeal goes onto the stone with the pie when it put it on the stone, so I don't put any cornmeal on the stone. If you are doing something else, you might want to try some cornmeal on the stone.[p]Also, make sure that the stone is plenty hot. I cook my pies at 550 degrees, and I let the stone preheat for 30 minutes. Pizza dough will not stick to a hot stone. Unless you put the pie in upside down....[p]Here is a link to my pizza hints and tips page, if you are interested.[p]TNW

  • The Naked Whiz,
Thank you all for your comments on the pizza dough. We were not pre-heating the stone. Yikes. Now we know.

The Naked Whiz,[p]You can use semolina as well for the corn meal.[p]Ashley
