Pulled Pork Enchiladas - need recipe please

in addition to the meatless green chile sauce, there is a separate one on there for Green Chili made with ground pork butt. We generally make a large batch so there is plenty for the freezer. Toward the end of portioning it out, there is always several containers of the gravy with not much meat. This is an excellent enchilada sauce too. (but so is the green chili itself)

Dang, I guess I am a chile head. I even like it for breakfast. :laugh:

About 20 years ago, before they moved, we all did a road trip to New Mexico and sampled quite a few Mexican delicacies, (both food and drink) that were above and beyond the Tex-Mex stuff on the border that we grew up around.

It's kind of funny, but one of the meals I remember the most was in bar that adjoined a bowling alley.
