How was the crust? Did the 3 day rise change much?

The crust is fine.Crispy on the outside and soft in the center.I have been doing this for about three years now and find that the flavor and texture is greatly improved by doing this.Years back I had a talk with the chef at my favorite pizza joint and he made the comment that the best dough for your pie will be one to two days old.I took his advice and never looked back.
