I have a couple.
This is blackened. Melt butter coat both sides, add rub, flip after a couple minutes, add more rub. Dome temp about 400. but the CI was probably around 700.
McCromicks has an even easy cajun recipe.

They are on the box. Bump up your dome temp by 50 from the box.

Yep blacken. Just make sure it's flakey.
