07:00 hrs - Only one butt left on the Egg

Like I said earlier I started two butts at 8PM last night, stablized at 250 dome, made a before bed time check on the temp at 00:30 hrs, lookng good at 250 dome.

Got up at 04:30 hrs, dome was down to ~210 and butts tested at 140 and 165. I adjusted the vent and daisy wheel a tad, putzed around for 15 minutes or so to check for an increase in temp - temp back @ 250 dome. Went back to bed.

07:00 hrs - smaller butt tested at 198 - yippe! Pulled and now in the cooler for a rest. This butt literally fell a part when pulling from the egg - WOW.

Coffee cup in hand and waiting for the last butt to finish up..... Looks like they'll be 18 holes in my immediate future :evil:

I just want to comment after some of the posts I read yesterday... sorry for the epistle in advance....

Note to new eggers: I consider myself a novice, eager to learn, surrounded by a very deep talent pool on this forum, wanting to improve my eggin' skills and not necessarily qualifed to offer comments on much. However,there are literally thousands of posts on the site and the search tool is a great way to increase and enhance your knowledge base in addtion to some fine addtional URLs you'll find if you keep your eyes open when reading the posts. I can see the results of my eggin' improving with each cook - I'm excited about the results of my first overnight butt burn and appying what I've learned from Sat's rib cook to my next set of ribs. It's all good!

I remember my earier frustrations (especially after turning a $60 Christmas Day rib roast and the gaskets to toast :lol:) - felt like I was taking a drink from a fire hose. Just remember learning to cook on the egg is a marathon not a sprint, keep reading on the forum and researching your questions will only help prepare you for a fine eggin' experience. I'm hooked! :)
