chesapeake bay crabmeat is now in and on the egg

the local (northern va) grocers are now carrying chesapeake blue crab meat (if you are into crab, you need to read labels, during the winter/spring, the crab meat, even under local labels like phillips, comes from places like s/e asia). . .blue crab is more delicate and sweeter (IMHO). .. .made some most excellent crabcakes on the egg friday night. . .as follows[p]fired up the egg to about 375 dome temp, laid my fish grid on the direct set up grill. . .[p]took one pound of lump/backfin crabmeat loosely separated,[p]cut up two slices of white bread (crusts removed)[p]in a bowl mixed:
1 egg
1 heaping tablespoon of mayo
1 tablespoon of dijon mustard
1 tablespoon of worschteshire sauce
approx 1 teaspoon of old bay
approx 1 teaspoon of dizzy tsunami spin[p]put this mix and the bread in with crab meat and mixed gently. . refrigerate for about an hour. .. .then make into 4 nice crab cakes. .[p]oiled the fish grid with a little veggie oil, put the crab cakes and cook about 7 1/2 minutes per side or until done (lightly brown and crusty on the tops. . .[p]most excellent, served w/cocktail sauce or tarter sauce. .. wife said that they were as good as anything we get at restaurants. . .[p]

    MMM...those sound delish! Wish I could get good seafood here in West Virginia. If I ever come across any good crabmeat, we will definately try these.[p]~nikki

    i know you must have at least a Safeway near by (is 'Giant' near you also?). . .ask your fish counter guy there if they get stuff in thats "local". .. that's where i buy mine. . .

    nope..no Safeway...not even a Giant. We have Walmart. I don't think I'd want anything local. The only local water we have is the Ohio River. Never, never eat anything from there. As for a fish counter...well, we do have one of those at the Walmart, but it is all stuff that comes in frozen from who knows where. [p]~nikki

    sorry to hear that. . boy you people in west by god virginia might as well be in afganistan. .. i'm surprised to see that you have 'lectricity to run the computer (or is boccie down in the basement pedalin the bike run generator to get you juice?) heeee. .. .[p]seriously, if you want fresh crabmeat, i'll bet there are plenty of chesapeake bay providers that will cold-pack it and ship it to you fresh. . .for a price of course. . .[p]may be worth it though for a change of pace. . .

    i even have a little web cam. .. what i haven't figured out how to do is how to set up the whole linky thingy thing (thats tech talk for you) and post them. . .[p]the crab cakes were most excellent. .. simply had the cooking grid in the normal position with the fish grid laying right on top of it. . .had the dome temps at about 350 - 375 and cooked them direct with one flip (let them go a little longer (about 7-8 minutes) on the first side so that they hold together during the flip (you know i rarely time anything, i go by look and feel - kinda like how i found my wife). . .they were a nice broiled light brown and a little crusty on the surfaces. . .really yummy.. .
