spare ribs
When I smoke a pork butt, I usually cook at 220 until it reaches about 190 - 200. When I do baby backs, I cook until they are done - they pull away from bone with some resistance. Usually 3 -4 hours. How about big, meaty spare ribs? I put on about 5 lbs this AM before I went to work at about 200. I'll be home after it's been on about 12 hours and I'm hoping for the best. What do you all think? Too long, not long enough? Also, you can't really measure the temps of ribs cause of the bones, so what do you do? Thanks.

It depends if the spares are trimmed or not, but usually trimmed spares take about 5 hours, compared to 4 for BBs. Untrimmed, I've gone 6.5 hrs, but it was a pretty big slab, about 7 lbs. But that was with a dome averaging 250.
12 hours for an untended cook seems like a long time, unless you have a stoker, etc. I guess you'll find out soon enough.
For doneness, I look at how the meat has pulled back from the bone, how limp the slab is, and if I can just pull a bit of meat off with my fingers. If, when I try to pick the slab up, and the portion under the tongs breaks away, I know their done. -
Hi eyedoc. Sorry to tell you, but I'm betting they are going to be weeeeellll done. Crispy maybe. A straight cook(no foiling, etc.) and you're looking at six, maybe seven hours max at 250 deg. BTW, unless you're using a power draft of some sort(stoker or guru), don't be too surprised if your fire is out when you get home. 225-250 degrees dome is generally considered to be the low temperature sweet spot for an Egg and much below that tends to be problematic without a power draft. Let us know what you find when you get home. Mark

if they are really meaty, and it stays at 200 dome, maybe.
you will find out soon. the difference with a butt at 250 and 200 is about 14 and 22 hours. and you have to kick that 200 up at the end of the cook to finish it.

my best spares went 9 hours atb 250, no opening the dome to peek. it was an accident. demon alcohol induced me to putting them on at the start of an overnight butt cook.
