What to sample on a small BGE?

I'm cooking for 200,or so, Monday at the American Legion.I'll be using regular grills and smokers.My large would never keep up!Several of our members have expressed an interest as to what "egging" is all about...as I won't shut up about it! I am bringing my new small egg to give them an idea of what they are missing. What should I cook ...sample?... that would really wow them?

Spatchcocked or beer can chicken would be impressive on the small.

If you want to share it with many people, how about doing finger foods like wings? (You sure you can't bring your large up there instead?) Spatchcoks are always excellent, but might be hard to share with many people?

I wish I could bring my large, but logistics prevent it.The logistics of loading it back up with a belly full of Guinness! :blink:

Seriously, I like the fingerfood idea! I haven't tried cooking wings yet, but I have plenty of time to practice!

Just cook the wing segments (as opposed to whole wings). Quick cook, and you can do a bunch of varieties/batches using different rubs, sauces, etc....
and you'll be the hit of the party!Well, your egg will, anyways.... :laugh:

Can't miss with ABT's, quick and easy. You could even cook the chicken ahead of time and use that to stuff the Jalepenos with.

I think that my favorite cooks on the SBGE are fatties. I think that you can get enough sausage logs on there to make them do a double take.
Another cook I've done on the SBGE with good success is prime rib.
You have the plate setter for the Small, right? -

Get that little Egg screaming hot and toss on a
very good quality 2" thick steak or Tri-Tip. This will make your point. 90 seconds of flaming sear on each side. Pull and rest while you bring the temp down for final roast.
After the steak is done fill it with ABT's that you have preped the night before. This will show the highs and lows of the small and also easy cooks for you.

works for me, and if you can bring a small camp stove to boil water in you can have pulled pork cooked ahead in food savers and have a lot of food to serve.

What a bunch of great ideas.I wish I had bought 14 small eggs!Yes, I bought a platesetter for it but haven't used it yet.I wonder if I could cram all these ideas on my large egg? Then they WOULD be amazed!
