Yes, I have two birds I will brine tonight (I hope) and cook tomorrow. I usually follow the recipe for Brant's Brined Beer Butt Bird. I have done it direct and indirect, from 250° to 300° and can never remember which I liked best. LOL no good to get old. [p]Some time I skip the part of wrapping in plastic for 24 hours.[p]Regards,

I use kosher salt for the brine not table salt. Wouldn't want you to have a salty bird if you decide to try the recipe in my post below.[p]Cheers,

Car Wash Mike ,[p]I have never put rub inside the bird, but have always added rub in the beer can. Worcestershire sauce, hot sauce, rub...whatever. Last time I used Tsumani Spin on the outside and Jamaican Firewalk in the beer.

Yo Mike, I have never put rub in the beer can, but I will try that it and see if it adds more flavor to the bird. I do like putting rub under the skin as it does add flavor to the bird. I don't use beer in the can either as that constitutes alcohol abuse in my book. LOL [p]Actually the only times I do use beer as an ingredient with BBQed meats is when I make sausage or meatloaf and then I use a dark beer for that. [p]For the solution in the can, I use equal amounts of Italian dressing, lemon juice and apple juice. One other trick I will do is to freeze the marinade I use for boneless/skinless breasts immediately after removing the breasts from the marinade.[p]And how 'bout them Royals? I always rub the birds insides. I also put rub in the beer can. I don't see how a chicken could be any better than cooked this method, but I haven't tried spatchcocked yet. I'll also put a chunk of onion or apple in the neck opening. See-Yaa
