Frank that all looks great. How did you cook the beef ribs? Time, temp, etc...they look terrific...

Removed the membrane, little EVOO to hold the rub, rub (used a rub a local butcher shop mixes - pretty good stuff), and 300 dome for about 2-1/2 hours. Sauced with Sweet Baby Rays last 20 minutes - they were nice. -
I have some beef ribs in the freezer...those bad boys will be cooked this week...yummmmmmm...

Forgot about the smoke. I haven't moved much to Corpus yet but I did bring some frozen sugar cane with me. Used four pieces of sugar cane (split in half long ways) about six inches long each. Driving my new neighbors crazy.

Wow! As mentioned to the crew in a previous post, I've been purposely avoiding looking at the Mini and the cooks people are doing because I've got an empty spot on my table where one would fit perfectly! Going to have to hold off until later for that, though.
Good to see that all that was cooked on the Mini! -
