Coated the ribs with mustard and rub this morning and put them in the frig for about 8 hours. Fired up Mr. Humpty at about 4 o'clock and put the rib on the rib rack with a drip pan. A nice handful of Jack Daniels wood chip (soaked in water) and WOW!! Once again, the nighborhood filled with smoke, the neighbors came running and 1.5 hours later we sat down for a feast!! The last half hour I applied the sauce...Gordon's recipe. If you haven't tried it you need to get ahold of it and make yourself a batch. Its excellent. Oh by the way, the rub I used this time was Emeril's Essence. Very nice!!
