beer can chicken question

Unknown
edited November -1 in EggHead Forum
doin' beer can chicken for the first time. however, all the recipes i have seen call for a 31/2 to 4 pound bird. of course i did not look at the recipes before i went to the store. my bird is 6.12 pounds. can this work? if so, how long should it cook? thanks in advance for the help.

Tommy K, yeah, that may be stretching the benefits of the beer can liquid, but I'll bet that bird lightens up a half pound or so when you cut out the obvious fat at the throat. I'm assuming you don't have a quick read or Polder type probe to check for internal temp. Therefore the usual rule of thumb is at 325° dome it takes poultry about 15-20 minutes per pound. One other test with beer butt is you should be able to "shake hands" with the bird when done. Good luck!
