Hot Wings - Not For the Wimpy!

Did up a batch of wings yesterday that were some of the best hot wings yet! Modified a recipe posted by Stogie a few months back. Did them direct on a raised grid on the small egg, dome temp was 300° to 325°, flipped and moved 'em around about every 10 minutes, pulled them off after 40-45 minutes, then tossed them in a warmed hot sauce concoction.[p]Here they are before the sauce....[p]<IMG SRC= "http://www.hp.ufl.edu/~tlambert/pics-from-home/poultry/wings-before-sauce.jpg">[p]and after the sauce....

    Chef Arnoldi,[p]"KNOCK YOUR SOCKS OFF WINGS"[p]2-4 lbs chicken wings[p]The rub (makes enough to fill a regular spice jar):[p]1/2 tbsp chili powder
    1/2 tbsp chipotle chili powder
    1 tbsp cayenne pepper
    1 tbsp white pepper
    1 tbsp black pepper
    1 tbsp cumin
    1 tbsp salt
    1 tbsp garlic powder
    1 tbsp hawaiian sugar[p]The sauce:[p]1 cup Franks Red Hot Sauce
    1 stick butter
    1/2 tbsp cayenne
    1/2 tbsp garlic powder
    1/4 cup honey[p]Because the grid is so close to the coals in the small, I chose to do these direct on a raised grid to keep from having too much of a problem with flames. Get the egg up to 300°-325° and stabilize.[p]Combine rub ingrediants. Sprinkle or roll the wings until coated. Turn and rearrange wings about every 10 minutes keeping an eye on the hot spots. Took mine about 40-45 minutes and they were ready. During the breaks, put all sauce ingredients in a pan and warm to blend. After wings come off grill, put in bowl, cover with sauce and toss to coat.     Our small raised grid is just like our large...made with the stainless bolts, nuts and washers. How's the weather down there? Did ya'll get hit with that storm?[p]~nikki

    Here is a picture of the raised grid I made for my small egg.I got the grid at Home Depot and used 3 1/2" stainless steel carriage bolts for the legs.
