Pork Butt holding time

OK, here's the deal. I have a love-hate thing going on with my Egg. I refuse to lose sleep cooking dinner, so I decided to put on 2 pork butts at 8am this morning so I could watch the temp. Of course, the Egg knows I am watching so decides to behave!!! The therm has been nailed at 225* for 11 hours. That NEVER happens at night!!! I know they aren't done yet, but do I leave them cooking all night and wrap in foil for dinner tomorrow afternoon? I peeked in and it looks like I still have plenty of lump-if not, I could reload but I hate to upset a happy Egg! I tell you, I can never get the temp to stabilize like this at night!!!! What should I do?

    Ruth,[p]You're probably not up still, but the answer depends on how big of a butt ya have on the grill, and what internal temp it is at now. If you put it on at 8a, and it's been cooking at 225 for 11hrs, it's likely to be done while you're sleeping, and may be overcooked when you wake up (figure an average butt is about 8 lbs, and 2-2.5hrs/lb would put you at 16-20 hrs.) If it were me, I'd stay up until it was done, then wrap it up in foil and stick it in a cooler. Then go to bed for 6 hrs or so, get up, pull it, and put it in the fridge (after eating a healthy portion for breakfast.) Then I would go back to bed and worry later about reheating it for dinner. Then again, I'm most of the way through a bottle of wine, so it's possible that I'm not thinking straight (thought I'm typing ok.) ;)[p]Rich G.
