First Brisket
Cooked my first brisket today. I have had my egg about 3 weeks now. I cooked it for 10 hours at 250 to 275 degrees for 8 hours then I foiled it and cooked it another 2 hours. The internal temperature at 12 hours was 204 degrees and I took it off and place it in a cooler with towels for about an hour. The meat was hot, moist and very easy to cut. I am taking it to a party tonight and hopefully the other twenty or so people will enjoy it. If they don't, my inlaws will certainly enjoy it for lunch. This party is a finger food deal and I am serving brisket and Kaiser roles. Thank you brother Dave. [p]Jim

jim duncan, I have a feeling your inlaws will never see the first piece of brisket tomorrow. Better do another one if you want to stay in their good graces.
