3 Dishes With One Cook - Sweet Pork Barbacoa

The basic ingredient is the Sweet Pork Barbacoa.
Start off with some Pulled pork

Add some coke and brown sugar

It is all that simple, now for three great dishes
I am sure we all know what a pulled pork sandwich, the Sweet Pork Barbacoa so no pictures for that dish.
Moving on to building the salad.
Cover base of the shell with lime rice then heated black beans (fully covered).

Next a heavy coat of cheese (the picture has a light coat for picture purposes)

Next a nice heavy layer of Sweet Pork, a light covering of black beans, some toasted corn tortilla strips a light layer of lime rice and a medium covering of Tomatillo, Cilantro, Lime Dressing

Serving, topped off with some black beans over the cheese. Some spiced refried beans on the side. And this is a very nice meal

Using the same ingredients a very tasty burrito can be made
Build these as you like. I took a tortilla shell, put on the rice, black beans spiced refried beans Sweet Pork Barbacoa, cheese, and a nice helping of Tomatillo, Cilantro Lime Dressing.

You can heat the burrito or eat it as is. Another very tasty eat

Kent they look great. Tell me how you made the little tortilla bowls. Outside of a stainless bowl?

However, they can be made by using a couple of food cans.
When I was young - as I recall - my parents got a can and using a can opener, punched holes in the bottom of the can.
The tortilla shells are put over the smaller can then inside the larger can and put in a fryer.
I am sure there are other ways to get this done but I was working more on the dressing and sweet pork.
The shells I found were expensive almost $2 each. I will figure out a way to make my own.
Hopefully someone else has done this and will share their methods.

Ive done them in the oven inside and outside of a stainless bowl. Steam them a bit first. The pattern on those is interesting.

You are gonna give Cafe Rio a run for their money.
To replicate Cafe Rio's sweet pork barbacoa, I have made the pork in a slow cooker with coke and brown sugar. The tomatillo ranch sauce was an easy recipe to find on the net.
I like the idea of using pulled pork for this recipe. It must have tasted great.
