Brisket Too Soon

Please help.
I put-on my first brisket last evening looking toward dinner today. It started at 9.1 lbs, dome temp 230.[p]The temp is now 187 and I'm planning to take it off at 189, wrap it and store it in the prepared cooler with insulation. With about eight hours to go, are there any suggestions on how long it will keep in the cooler assuming we want to eat around 5:00.[p]Any tips will be appreciated.[p]RightBrainer

    RightBrainer,[p]I've done briskets a few times. I was particularly happy with one. I pulled it off at 195 degrees, wrapped in foil, then in a towel, then a cooler. I stayed worm for four and a half hours (when we ate. i then pulled/shrdded it. Some people like it sliced. I think you have to decided how you will eat it. I just got an insulated box that fits inside my cooler. I am told it will maintain temp for at least 10 hours. Can't wait for my next low-n-slow cook![p]Smokey
