i did a whole brisket and butt last pm, took them off the egg around 10:45 am today when they reached about 198-200. was supposed to bring them to a luncheon at 1200 but yadi-yadi-yada, there were scheduling changes and we'll be eating them tonight for dinner at 5:30 pm. How long is too long for a rest? i'm sure this has been asked before but i don't recall the answer.
