This is the sauce I use for pulled pork. -RP
1 qt cider vinegar
6 oz yellow mustard
¼ lb butter
¾ T salt
½ T black pepper
½ T cayenne
Juice of ½ lemon
½ t sugar
32 oz catsup
Cook at a simmer for 10 minutes. -
IMHO: Save the vinegar based sauce for a whole hog.
Seriously.. Eastern NC BBQ is WHOLE Hog and the vinegar based sauce. Western NC BBQ is butts and shoulders and a more tomato based sauce.
However if you insist google Piedmont NC sauce you'll get plenty to choose from
Pulled Pork -
MUSTARD!!
Could have sworn Salisbury was right close to the Piedmont... -
Hotcorn,
Elder Ward's pulled pork recipe gives a very detailed description of the steps to make a good Butt. His recipe is posted on the Whiz's site at http://www.nakedwhiz.com/elder.htm#fire .
I more or less followed these directions for my 1st butt, and it came out great. My writeup of this cook is posted on our blog at http://www.fearlesskitchen.com/2009/03/recipe-north-carolina-style-pulled-pork-guest-post-from-fearless-grill-.html
I wasn't thrilled with his vinegar sauce - it tasted good on its own, but when it went on the meat, the flavor got lost a bit. I'd try one of the other ones that were posted here.
Good luck!
