Pepper encrusted steak

<p />On Tuesday evening I took a nice ribeye and coated it heavily with that "swamp thang", wrapped it and stuck it in the fridge.[p]Last night I took it out of the fridge and coated it very heavily with fresh ground pepper, let it come to room temp and threw it on the mini.[p]Pulled it @ 140.[p]The pepper and the swamp venom was a cool combo.[p]The mini takes some getting used to. I still have to make that ring which Larry told me to make. Cooks a little hot.[p]Mick

    Smokey,[p]You hit the nail on the head.[p]The mini cooks a little hot and YB told me to make a 1.5" ring that lifts the grid a little higher. Haven't made one yet so I cut the bottom out of a pie pan and used it. Raised it a touch. Needs to be higher though.[p]Mick

    MickeyT,[p]Looks like you could call that "The Consentrator". That looks like it would do the opposite from what you wanted it to do, but it sure looks like an interesting way to focus more heat in the center to really sear a steak. I would need a really big one for my small, but I would think it would work pretty good on a mini if you wanted to consentrate the heat in the middle. I use to experiment with a metal pie pan over my steaks to see if that would make them cook faster - it didn't, but that setup of yours might have some interesting applications.[p]Tim

    Tim M,[p]I'll bet your right. I never even thought about funneling the heat inward, I just thought I was raising the grid. Good observation.[p]PS. My steak was a tad "crispy"[p]Mick

    Smokey,[p]i would like to try that on my small, but I don't think I can easily find a pie pan that big. If I could, I would. Maybe I will run into a wierd sheet metal worker with some free time...... Now you got me thinking too.[p]Lets us know if you try it.[p]Tim
