Pizza Dough Question

Grillin&Chillin
Posts: 31
I usually use King Arthur Bread Flour for my pizza dough. I bought some gluten to add to the flour but am unsure how much to use.
Has anyone done this before?
Thanks.

I make my pizza dough in the bread machine, have done this for years. I do not add gluten with my King Arthur Flour. My pizza's are fine.

If you are using bread flour I would add 1 Tbsp of vital gluten to 4 cups of flour.

Thanks, Fidel. That's exactly what I needed. I've made pizza dough without it and it turned out real good. I'll be interested to see if this makes it better or if I should have left well enough alone.
