Cherry Smoked Pollo a la Naranja on The Mini

Ingredients
3 chicken breasts
MARINADE
2 cups water
2 tablespoons salt
1/2 teaspoon pepper
2 teaspoons lemon juice
1 1/2 cup orange juice
1 large garlic clove, minced
2 serrano chili peppers
1/4 teaspoon DP's Dizzy Dust

Directions
1)Combine the marinade ingredients in a large bowl.
2)Add the chicken to the marinade, cover and refridgerate for 1 hour.
3)Preheat egg to 450* dome.

4)Cook the chicken on the grill, leaving the cover of the egg open.



When the chicken has cooked for about 25 min, take it out and marinade the chicken once again, this time with pure natural orange juice, for about 10 minutes.


Reserve orange marinade.
5)While doing the second marinade,bring dome temp down to 350*,

Place the chicken back on the egg, (this time on a raised grid if using other than mini), add cherry smoking chips and close the lid. Continue to cook for another 15-20 min or until done. Baste with remaining orange marinade.

6)Serve the chicken with steamed flour or corn tortillas. Add avocado,beans, green salad and Pico de Gallo on top.

For dessert...Loren's very own delicious Mango Ice Cream with our good friend Grace's Limoncello Liqueur...what a treat....TKS Grace!!!

Loren's Mother's Day flowers...

Dinner looks fantastic Beli. Everytime I see the view you have from your eggs I can't believe how beautiful it is there. I'm sure Loren is having a nice mother's day with a beautiful meal like that.

Looks like another beautiful day in Monterrey. Very nice looking Pollo. Thanks for the recipe. I will be trying this as we need to eat more poultry. Looks like Loren had a very nice Mothers Day.

Eddie, the heat went up to 104* F today....so apart from eating...we spent most of the time in the water.....the chicken was great, practically no fat on it and choosing the salsas to your liking makes it nicer....
