Hi everyone, Friday I received the Shun Kaji honing steel that I snagged on eB*y for the knives I bought a month ago. How often do you use your steels and how do you know when you need to?

On another note, for those of you who read my last post on Thursday, my wife did well through her shoulder surgery and is very sore, but doing nicely. There was a tear in part of the rotator cuff that the MRI did not show on top of some bone spurs the Doc was aware of. That tear is what was causing most of her pain. Some P/T and time and she should be as good as new. Thanks for your thoughts and prayers. Mark

Mark..glad she's doing well. Make sure she sees the post below on the recipe for blackened bananas. She wanted it at Waldorf and I was out.
Tell her HI...and happy mother's day.

    Glad she is doing well.

I give my Heinkels' a few passes before each use. They are all over 60 yrs. old and show almost no signs of wear. I have not needed to sharpen them or have them sharpened professionally and they are quite sharp.

Thanks folks, and thank you for reminding me about the bananas Kim and Happy Mother's Day to you also! I forgot what recipe she was after. I just changed her dressing for the first time. I expected a lot of bruising, but it didn't look bad at all.

Getting the Guru set up to do another pastrami today. The local market had corned flats on sale for $1.99/lb. and corned points for $1.79/lb. yesterday so I loaded up!

    Thanks again, Mark
