What you gona stuff it with??? How about cooking it and using the meat to stuff some poblanos ??

It'll take till it's done.....a 5# brisket I would say roughly 10 hours...depending on what you stuffed it with it may take longer..your question is to vague to give any kind of detailed response....cooking setup, etc. either way it is a piece of meat and no 2 cook exactly the same...

Thanks. I was not expecting a response that would let me know the exact moment I can serve the guests brisket, I know when BBQing it is done when it is done, just looking for a ballpark. The setup will be indirect of course, 250 dome, and it is not stuffed vey much, just a little garlic and spices.

Now we are getting somewhere. I just did this recipe 10 days ago with two brisklets total weight 26 lbs, before cutting bulk of fat cap off. froze for 5 days and served this past sunday. Not the norm, but EGGtastic. Added a package of Lipton onion soup dip/mix for the final au jus combo.

We need to take this new egger under our egg tent. He ain't stuffing it, just highly seasoning.

Not tied or rolled. It is in one of those plastic vacuumed bags and it says it is a stuffed brisket on the label. It does not look like it is stuffed much at all, and I was told it is stuffed with garlic and spices. It is a little over five pounds. Plan to go indirect, 250 dome temperature.
