Leg o lamb - take off fat layer??

I have a bone in leg with a light fat layer which i am going to put on a rosemary/garlic paste. Does the fat come off to expose the meat? The fat actually appears to keep some of the meat on the bone or "together"

i leave a thin layer and only trim the really thick hunks

I agree with bill, a thin layer of fat will help keep it moist and adds flavor. The egg is a great way to cook lamb, you will love it.
