Steak Help - have the in laws in town

My father in law is in town and we have many guests in town. My medium is not large enough to cook all the steaks so my father in law brought his portable gasser to cook part of them.[p]I have cooked many steaks, most all to perfection. I say most because I have ruint a few![p]I will nto have enough time to do the TRex method (sorry TREX). The cut is tenderloin and are 1.5" thick. We all prefer pink center, juicy, and when cut & pressed with a fork, no blood juice. I guess this is a medium. [p]How long should I sear on each side and then dwell for the center described above.[p]Banker John

    you can still do a modified trex method if you want. .. fire up the egg to 700+. .. throw on the steaks, flip them after a minute and a half, then shut down the vents and let them dwell for about 3 minutes per side. . .careful when you open up the top that you don't get backflash. .that way, you still get a good seared steak, done quickly, but without the 20 minute wait. .. since the egg will still be in the 5-600 range durng the dwell, they will be done pretty quickly. ..and if only 1 1/2 inch thick, i think about 3 minutes per side after the sear ought to get you there nicely. ..[p]good luck[p]max

    meant to add two things. . .don't know how many you need to do, but if you can't fit them all on at once. . .you could try doing them in a couple of batches. . .after the first ones are done, just put them on a plate so they stay warm, open the vents wide again (it shouldn't take more than a few minutes to get back up to 700) and do a second batch. . .[p]also, don't know how you set your's up, but brushed with olive oil, then kosher salt and either dizzy pig cowlick if you have it or ground pepper, is an excellent way to go. . .[p]

    banker john,[p]The tenderloin (aka filet mignon) is my steak of choice. I have done them with the dwell method but prefer to sear on both sides until done and remove. I have never tried the Trex method because I just don't think it will sear them enough for my liking. I like them done with a pink center as well, but I like the heavy black seared outer. [p]I salt more than you would think would be good, and pepper them. Then get your grill to searing temps. Cook for 4 min on side one and flip, cook 3-4 min on side two and flip. Keep doing the flip every couple minutes until you get the doneness you want. I use my Thermapen thermometer to tell me when I hit 115-120 and remove (they will cook a little more after they come off).[p]I have a father-in-law like yours but I am glad he never brought his own gasser to my house! Gees, but he always brings his opinions![p]Tim

    Tim M,[p]If you want more sear, then just add to the searing time. Do 3 minutes a side instead of 1.5. Then rest for 20 minutes, and decrease the final cooking time at 400 F so that you get the doneness you prefer. I think you'd be pleased with the results.[p]TRex
