Mr. Hyde's Pizza Setup

Dome temp was 525° to 550°.[p]Platesetter legs down, then pizza stone, then pizza screen. Cooked the cheese one about 8 or so minutes, the deluxe one a little longer.[p]Dough was from Publix Bakery (thanks Zip!).[p]pizza-with-fire.jpg[p]cheese-pizza.jpg[p]QBabe

    Ryan,[p]I like the screen for several reasons: [p]It is easy to make the pie on the screen, and then put the whole thing on the preheated pizza stone. Also easy to take the pie off.

    I find that it browns the bottom perfectly...when I have tried without it, I burned the bottoms too much.[p]And the most important reason: I'm stubborn, and that it have I have always done it (before my egging days).

    Mac in NC ,[p]Most any restaurant supply place, but the large one we just bought came from Fantes. Hopefully I'll get the link correctly included (smilie face!).[p]QBabe
