pork tenderloin

I just got home from the grocery store and noticed the tenderloin had a stinky smell. Is that a sign that its bad?

    Depends. Was it a cryovac wrapped tenderloin?

    Sometimes the process traps some sulfur-smelling gasses and they release when you open the package.

    If the smell doesn't subside in a few minutes I wouldn't eat it. Often time that smell goes away and the meat is actually fine.

    The last pack i bought had an odd smell to it, but it wasn't the kinda smell that I associate with bad food. It was a quad pack (vac packed) from Cosco and we ate all of them without an issue. My past kitchen experience tought me the true bad food smell.

    Ultimately up to you though :)

    Rinse it really well in cold water. If it still smells off take it back.

  • yep, it was in the real thick plastic. It was a sulfer smell :S Its on the egg now, now its smellin like hickory :) thanks

    I had a funky smelling pork tenderloin on Saturday. Opened it up and it didn't have an overpowering smell, but there was some "funk" to it. I removed the cryo packaging and threw it away in an outside trash can. I ran cold water all over the tenderloin and patted it down with paper towels. I let it sit for a couple of minutes. Went back, no smell at all. Smelled just fine.

    It actually turned out great. I used one of Steven Raichlen's recipes for coffee crusted pork tenderloins. I was skeptical until my wife and I had knocked back a whole tenderloin in one sitting and were contemplating the other one. It was a pretty simple recipe for the rub - ground coffee (we used Starbucks, but I'm sure Folgers would have been fine), ground cumin, coriander, fresh cracked black pepper, onion powder, garlic powder, kosher salt, and sweet paprika. Liberally applied the rub, let it sit in the fridge for 4 hours, and cooked it. Turned out so good that my wife has a reminder for me to slap my granny next time I see her.

  • that sounds good. i'm a big coffee fan, and pork fan. how can that not be good. I'm goin to try that this weekend...got some good star bucks sumatra...i rinsed the tenderloin earlier and everything was eggcelent :P...i guess i was just worried with all the pig flu talk... :woohoo: lol
