I tried a Salt&Pepper rub on some Pork Butt

My wife says that she thinks something in the rubs I use gives her indigestion so she asked me to do a butt with just Salt and pepper.
I started with some mustard and then rubbed in the S&P mix I used (1 part salt, 1/2 part fresh ground pepper). It turned out really good. The crust was not as good as with the normal rubs, but I really liked it and she thought it was better than my usual butt.
Anyone else do this?

As long as your wife likes your butt, then you are doin' OK ! :evil:

Good old salt and pepper has got to be the original rub and works on anything. Add some brown sugar to it and you have a good rub for ribs and pork. Add some thyme instead and it is perfect for beef, turkey or almost anything. It has long been the classic for roast beef. I think the only thing you have to watch for would be applying it to soon. The salt, if left too long could draw juices out of the meat before you got it seared. Preferably sea salt and fresh cracked/ground pepper but I'm not to fussy.
Sometimes I will cook with nothing, not even salt and pepper and enjoy it as well, saving the salt and pepper as a condiment. Often I will do steaks this way for the pure flavor of the steak and add S&P at the table.

Often times I like to keep it simple, and for those moments I have a jar of Paula Deen's "House Seasoning" on the counter top (1 cup coarse salt, 1/4 cup coarse ground pepper & 1/4 cup garlic powder). Recently I started experimenting with some Dizzy Pig rubs which I received as a gift. Tried some "Cow Lick" on a 2" thick, NY strip, and it was wonderful! Publix has been offering these steaks for $7.99/# (on sale), and while I have to dig around in the case or ask for a cut to my liking, there's enough marbling to render them juicy and succulent.

Good lesson learned, simple is great too. S&P on a butt is really good.
Sometimes recipe's, rubs & sauces that have everything but the kitchen sink in them sound great but when I comes down to it, leaving some of the 'stuff' out doens't make a lot of difference.
