Watermelon Rind in OKC recipe ??

I just received my order of watermelon rind from Old South but I have a problem - I don't know how to fix it! I remember it was wrapped in bacon but would the lovely ladies that made it please post the recipe? It had to have some spices on the bacon...it was OUTSTANDING! PLEASE....

    It wasn't my recipe, but I did get a copy of it.

    Bacon Wrapped Watermelon Rinds
    1 jar (16oz) pickled Watermelon Rind
    Tony Chachere"s or your favorite cajun-like seasoning or rub
    1 lb. bacon
    Cut bacon strips in thirds or fourths to fit rind pieces.
    Wrap a pickled watermelon rind with bacon and secure with a toothpick.
    Sprinkle liberally with seasoning.
    Grill at approx. 350. You have to watch them closely and rotate often, because with the high sugar content they burn easily.

  • Wow those were good! I bought two jars of them while we were there and am looking forward to cooking some up. Every time I tell people about them they make a strange face and I assure them that I made the same face until I tried them. Really yummy!
