I got started after the rain ender here in Atlanta (about 10:00am). I started a nice fire in the Egg, then let the temp stabilize at 250*. I had a 4.5 lb corned beef with a cajun rub in the fridge over night. I let it come to room temp and she went on the egg at about 10:30am (indirect with fire bricks and a drip pan.[p]Its now 1:30pm and polder shows an internal temp of 158* (a few more hours and all will be set)![p]
