Appetizer Ideas wanted

I've just been invited (10:00 AM) to a friends house for a BBQ tonight. He's doing the grilling (on a duct taped gas grill) and I've been asked to bring a salad and something to snack on. The people we'll be dining with (3 couples total) all like and prefer a regular tossed salad. I want to bring something totally different for an appetizer this time. I've done the usual ABT's, wings, etc. but want something a bit different. I'd love th bring ribs but that would ruin his burgers and dogs he'll be cooking. Any ideas for a good finger food snack? I'm leaning the the vadalia onion dip here on the website. The snack doesn't need to be done on the BGE but that would be a bonus. You can reply here or send me an email with ideas.     its hot out there dude !!! Let him do the cooking and make yourself a big melon salad, use honeydew, canteloupe, and watermelon, wrap slices of assorted melons with prociutto ham, makes a refreshing appt. and the salted ham goes great with your favorite brew !!!

    Toe 49, hate to tell you, but ANYTHING you bring cooked off the BGE is going to put his burgers and dogs to shame. So, maybe you should do something no one would expect off the egg. YB's Tomato Pie is one idea. YB does it in a ceramic deep dish pizza pan (from BGE) but you ought to be able to do it in a rectangular pan so that you can slice it into small squares.[p]Here is his recipe:
    Tomato Pie
    Tomatoes,bacon and cheese make up this yummy pie.

    Ingredients
    1 9-inch deep dish frozen pie shell
    3 medium,ripe tomatoes,sliced
    6 strips bacon,fried and crumbled
    1 cup grated sharp cheddar cheese
    1 cup mayonnaise
    1/2 tsp salt
    1/2 tsp pepper



    Procedure
    1 Bake frozen pie shell following package directions.
    2 Preheat egg to 350 degrees.
    3 Place tomatoes in bottom of pie shell;top with crumbled bacon.
    4 Combine cheese,salt,pepper and mayonnaise;pour over tomatoes.
    5 Bake 35 to 40 minutes on a raised grid using a Ceramic Deep Baking Dish

    How about peanut butter pie. It is so easy (15 minutes to make)[p]2 graham cracker shells
    1 cup peanut butter (your favorite flavor)
    1 large tup cool whip
    1/3 cup morsels, divided (can use chocolate or peanut or both)[p]Mix peanut butter and 1/2 tub cool whip and 1/2 of morsels. Spread evenly in bottom of pie shells. Take remainder of cool whip and cover the peanut butter filling and smooth the top of the pie. Sprinkle remaining morsels on top of pies. place in fridge until dinner time.[p]This is a real easy recipe. A favorite of my 3 year old to make. Time to make, 1/2 beer.[p]Hope your dinner goes well. I know you asked for an appetizer, but like my grandfather said, "eat dessert first because you may die during dinner and never get to eat it." Dessert around our family IS an appetizer![p]Banker John

    I just smoked some Salmon and used it in a dip. Took it to a gathering last Friday night and came home with an empty bowl.[p]Egg Smoked Salmon
    Philadelphia Creamed Cheese
    Pickapeppa Sauce
    Fresh Chopped Garlic
    Fresh Chopped Cilantro and Parsley
    Finely chopped onion
    Crushed Red Pepper
    Lemon juice
    a little Old Bay Seasoning[p]It's a toss as you go recipe, add what you have...you want green onions or chives? I think I added the green onions.[p]
    I have to do a salsa for the second party I'm going to this afternoon. [p]Onions
    Garlic
    Cilantro
    Serrano Peppers
    Tomatoes
    Lotsa Lime
    S & P
    Mexican Seasoning (Cumin, etc)
    a little oregano
    Honey....my "secret" ingredient.[p]

    Make the vadalia onion dip and add about a 1/2 of pound of imitation crab meat to it. Just mix it up and bake it in the oven. Never fails to get compliments and will not upstage your host's burgers and hot dogs too much.

    Grilled eggplant.Cut into 1/2-3/4 inch pieces and mix well with sauted onion and diced tomatoes and garlic made into paste with salt. Refrigerate over night, then add a few tbsp of balsamic vineger and a lot of chopped mint. Great summer appetizer or side dish. Have fun.

    YB,[p]Do you have the recipe posted somewhere, or is it as simple as wrapping chuncks of watermelon in bacon and just cooking them up? I assume direct, but what dome temp?[p]Thanks,

    What you do is: take pickled watermelon rind, wrap with a piece of bacon (I usually cut my bacon slices in either thirds or halves). Cook them on some sort of grid (we use the fish/veggie grid with holes). Cook them at about 350 until the bacon is done. You have to keep an eye on them and flip them often, because the sugar in the pickled rinds will burn really easy and quick. [p]The sweetnes of the pickled rinds with the salty/crispy bacon is a real treat. They are almost like little candy nuggets.[p]~nikki

    You buy them in jars at the store. We get them when we go down South and bring back lots of jars. The only place I have seen them up here in WV is in Amish Country in Ohio. If you look on Google, there are all sorts of recipes to pickle your own (you want them sweet pickled, not like hamburger pickles). I have also included a link to buy them online.[p]~nikki

    We went out last night for my wifes Birthday so I am just seeing this.I buy pickled watermelon rind here in Augusta at Kroger stores it is with pickles,olives etc.The egg store here also sells them.I drain the watermelon rind.Wrap with a half strip of bacon and sprinkle with Tony Chachere's Creole Seasoning.I cook them on a raised grid indrect on a pan I ordered from Nordic Ware at 350°until the bacon is good and crisp.I have cooked these at two Eggtoberfest and Eggfest 2002 and everyone really liked them.
