Ok, I've a couple posts on this, but not much of a "how to".

My brother gave us some lovelly apple smoked white cheddar that positively delicious. :woohoo:

So, of course, I'd like to try and do some.

It looks like its an indirect thing, using the plate setter. But at what temp and for how long?
