over/under cooking ribs

OK - I cooked ribs yesterday (hungover today - does this happen alot?)

Although the ribs were great! They were not fall off the bone! I would say they were a tad tough because I do not think I cooked them perfect!

If ribs are a little tough - would this mean that I under cooked them or over cooked them? Seems like I heard you can't over cook ribs!

I cooked for 4 hours at 300 degrees! I have a thermapen - should I have used that?
