Chicago Chinatown trip- Great Duck and Chicken

Wife and I took a day trip on the train to Chicago and spent the day in China Town on Saturday. Boy they had great duck, chicken and pork cooked. I sure wish I could speak enough Chinese to ask how they smoked these products. The chickens and ducks were whole and spatchcock with the heads still on. The pork was whole hog about 60 lbs and also what looked like butt meat sliced butterflied and smoked.
Will certainly go again.
