Boston Butt:Plateu Temp

At what temp does a butt normally hit the plateu,and how long does it normall stay there? :huh:

  • I am by no means an expert, but my experience suggests 160-180 and can last for several hours. Temperature often drops a degree or two, when you bust through the plateau it goes fairly quickly. Truly, though, depends on the butt, set up, temp, etc.

    There is no one answer to that...we are talking a piece of meat, not a piece of lumber..."typically" anywhere from 145 to 160 internal..there is NO way of predicting how long it will stay in the plateau..has to do with fat content, cooking temps etc..I have had butts plateau as many as 3 differnet times at different temps..That is not the norm but it can happen..the best advice for cooking butts for company is to plan them being done EARLY..they hold well in a warm cooler and you wont be making excuses to hungry guests....It is not unusual to see internal temps actually drop when a butt hits the plateau..

    I have experienced pretty much what Wess says. I have had butts hit multiple plateaus, drop in temp and stay there for what seems like for ever. The last butt I cooked hit at least 2 plateaus, maybe 3 (I went to bed) and took over 21 hours. They can be unpredictable little rascals.
