Our favorite Cuban dish is fried pork chunks. I found a very authentic recipe on epicurean.com. I cut up the pork loin and marinated it last night. Tonight when I got home I cooked it on the Lg BGE in a CI skillet and then when the meat was done I fried the meat & onions in my Wok. It came out very tender and tasty. I will definitely do this again. Next time I will fix black beans & rice...tonight I served it with rice in chicken stock & a squeeze of lime.
