Tomato Pie Followup

I'd like to try the tomato pie, but momma doesn't like mayo. She thinks it gives her headaches, although she bases this on having had mayo in a Marks and Spencer sandwhich and then never ate mayo again. (She gets migraines and if something seems to trigger one, she does her best to avoid it evermore.) So, does anyone have any thoughts on a tomato pies, perhaps using yoghurt? Something else?[p]TNW

    Hey whiz, I saw a tomato pie being made on food tv last week, and it looked good to me so I looked up about a zillion recipes for it.. I wasnt crazy about the Mayo topping either, but I bet its one of those things that sounds funky but tastes great..[p]But since your wife gets headahces.. By the way, I hope she never got one in bed because you said shed never try it again and... Oh well.. anyway..[p]I found this one and Im going to try a variation of it..[p]9" pre-baked pie shell[p]Layer of Montery jack on bottom, then a layer of tomatoes, that have been sliced and drained for a hour to prevent getting the crust soggy..( Now I saw another recipe that said to use romas because they have less juice to begin with) brush the olives with olive oil and basil..[p]Next layer is Anduelle sausage and crawfish.. I cant get that so Im using chorizo and shrimp..Then a layer of thinly sliced onions.. Then 1/2 cup of cheddar cheese.. Top it all with bread crumb and parmesan cheese mixture... ( I saw one with Ritz crackers and dotted butter for the topping, which sounded good to me).... BAKE 350 15 or so minutes[p]Its almost like the tomates get lost in the mix with all that other stuff though.. Alot heavier dish..[p]You could put anythihng you want in them ..[p]I will be making this Tuesday and let you know how it was... [p][p]Dylan[p][p]

    The Naked Whiz,[p]I would think that since Mayo is just oil and eggs the you could beat a couple of eggs and butter, and make it kind of a quiche out of it. I know about migraines. My wife used to get them. Nothing more miserable. just a thought. Good luck.

    Here is a different recipe for tomato pie that has no mayo in it.I have not tried this one Doug.
