The Fresh Market had no bone-in pork chops (my favorite) so I decided to get 3 thick boneless ones. I had seen the chimichurri sauce on the forum, so grabbed a bunch of parsley while I was in the store.
DP Red Eye Express on the chops while the Egg was getting ready.
Seared with the dome open about 2 minutes on each side (used the lowest grid setting on the adjustable rig. Then moved to the top grid to finish to an internal temp of 140*.
While cooking, I made the chimichurri sauce from Bluecrab3s previous post.

FInished with a salad and Fresh Market Lemon, Basil Orzo.

Nice cook. I love a good, thick chop. I've never put chimichurri on pork. I've used it on ribeyes and really enjoyed it.
If you liked the chimichurri you should try marinating some chicken parts in it for about 24 hours. It works wonder on the bird too.

I've never had it before and wasn't sure what it was supposed to taste like. It was a little bitter when tasting it in the food processor , but when served on the chops, it tasted really good. Jana and daughter loved it also.
I did not have time to do a marinade, but have plenty left over for some yard bird, like Rod suggests. -

My BGE dealer now carries the DP rubs in the store. Quick replacement when I run low on any! Not sure how much he marked it up though. :( -
I will be hittin up the dealer here in town. The closest is in Prattville Al. 3 hours away. I have a shipment in the mail somewhere.
