The Fresh Market had no bone-in pork chops (my favorite) so I decided to get 3 thick boneless ones. I had seen the chimichurri sauce on the forum, so grabbed a bunch of parsley while I was in the store.

DP Red Eye Express on the chops while the Egg was getting ready.

Seared with the dome open about 2 minutes on each side (used the lowest grid setting on the adjustable rig. Then moved to the top grid to finish to an internal temp of 140*.

While cooking, I made the chimichurri sauce from Bluecrab3s previous post.
