Regulating Temp

After getting the egg up to 700 degrees to sear a steak what is the best way to get the temp back down and how long should it take. Do you shut all the vents off and then adjust once the temp gets to where you want it? Obviously I am new to this. thanks

    Earnest T, you can do that but I have found it equally effective to open the top dome to allow as much heat as possible to escape and then to close the vent down on the bottom while leaving the top vent open. Don't leave the dome open very long since you are providing plenty of oxygen to the fire and it will start burning even more. By leaving the top vent open you can dump some heat without allowing more oxygen to flow in. Then when the temperature drops you can adjust the top vent to start homing in on the temperature you want.
