The osmosis happens when it is soaking, and I saw your post this morning about starting the long soak, so I'm guessing you mean "how long can it rest (equalize) after the soak-out"?
Hmmm, I have gone 12 hours, plenty of times. So, although the curing salts have been rinsed off.... the meat is now cured to some degree. I would think 24 hours would be okay.
I'm not sure if freezing is an option, but if you are in a time or weather crunch it could be cooked in the oven.Happy Trails~thirdeye~Barbecue is not rocket surgery
