Zippy if you are out there would you mind posting your recipe for pizza dough. I remember a slide show you did on pizza and you had your easy recipe listed. I copied it but can't seem to find it.

Larry, glad you asked because I was recently looking at the slide-show & realized I had neglected to include the salt (must have seen the show 50 times but never noticed it wasn't there). I have added it to the show now it is complete :cheer: :
By the way, now having done the mini pies, I can also add that, in addition to doing 2-16 inch pies, 3-12 inch pies, this batch will do anywhere from 6 to 8 mini pies, I did 1/2 a batch last night & made it into 3 pies, however, they were a little doughy, so next batch I will sqeeeze 4 pies out of the 1/2 batchhappy in the hut

Larry, be careful with the heat, the coals are so close to the stone it can get away from you. Hopefully FGG Faith will weigh in & remind me (us) exactly how she does these with good resultshappy in the hut

looks great. I have a ton of high gluten. Would it work good doing it the same way? Your crust looks great.

I really don't know, imagine it would. I used All Purpose for 10-15 years before I stumbled across bread flour by accident & thought it worked better. But I have never used any high gluten or specialty flours, from what I have read here the high gluten is preferable, give it a whirl & let us know, with pictures of course :evil:happy in the hut

I have pretty much done it like yours but did the rise over a few days. Yours looks perfect. The color is real good. Here is one of my older ones. I need to make my own sauce. I have not had the chance to do that yet?
