BBQ Sauce - time to add ?
Kyle

I am considering a long slow cook of something (not sure what yet) but am considering the use of BBQ Sauce.[p]I am sure if I put it on and lay them on the grill uncovered, the sauce will burn and turn to charcoal.[p]I am wondering if I smother (liberally) the meat in sauce and wrap it in heavy aluminum foil, leave it at 220 for several hours, if the sauce will be burned, or should it leave a nice well done piece of meat which is cooking in moisture.[p]Any thoughts will be appreciated.

Kyle,
You might want to wait and add the sauce in the last hour or so. I have had problems with anything with sugar burning (in my drip pan) if I leave it in there too long. This includes sauce and applejuice. Besides, if you wrap your meat in foil for the whole cook, you will get no smoke flavor and you might as well do it in your oven. If you give me some more specifics, I would love to try and help.[p]Mike
