Those look to die for, Joe. We should've come over there for happy hour tonight since our egg is tied up tonight. We're cooking two 9lb butts tonight for tomorrow. We put up the pop up cover/tent thing to hold off the drizzling rain!

Did you season the chicken with a fajita seasoning? Our favorite marinade for fajitas:
2 tablespoon Oil
3 tablespoon Lime Juice
1 clove Garlic minced
1 1/2 teaspoon Season salt
1 1/2 teaspoon Oregano
1 1/2 teaspoon Cumin
1/2 teaspoon Chili powder
1/2 teaspoon Paprika
1/2 teaspoon Red pepper ground

We marinade the meat in 3/4ths of the mixture and put the last 1/4th on the veggies.

Hey Chris, how bout this rain.

We were suppose to do the fajitas in the kitchen and do a butt but I did not thaw in time so we are having ribs tomorrow, guess its not a total loss. We just use old el paso fajita mix and just poured it on after the pink was gone and use the same for the veggies. Your mix looks good, will try it next time. Those cast irons are real nice, still getting adjusted to their uses. Lets see some pics of those butts tomorrow. Stay dry.
