Cajun Spice Receipe

Requesting cajun spice receipes. Feeling like cajun pesto salmon this pm and was wondering what you all had for the spice. Will entertain any original variations on pesto as well.

    Spice, Seasoning, Chef Paul Prudhomme's Magic Cajun Meat


    INGREDIENTS:
    1 1/2 cup Salt
    3/4 cup Granulated garlic
    3/4 cup Black pepper
    1/2 cup Cayenne pepper
    1/4 cup Ground cumin

    Here is one of each:

    Creole Seasoning

    1/2 cup paprika
    1/2 cup granulated garlic
    1/4 cup granulated onion
    3 TBSP black pepper
    2 tsp white pepper
    2 tsp cayenne pepper
    1/4 cup dried oregano
    1/4 cup dried thyme
    2 tsp ground cumin
    2 TBSP sugar

    Combine all ingredients - makes 2 1/2 cups

    Chimichurri Sauce (latin pesto)
    1 bunch parsley
    12 cloves garlic, chopped
    4 TBSP lemon juice
    1 tsp red pepper flakes
    2 tsp kosher salt
    1 tsp groung cumin
    1 tsp ground oregano
    1 cup EVOO

    Pick off parsley leaves. Toss into a food processor or blender with garlic, lemon juice, red pepper flakes, salt, cumin and oregano. Process to a paste, scrape down workbowl. With the processor running slowly dribble in the EVOO until fully blended.
