Looking for a good appatizer idea!

The wife and I have been invited to a friends house for dinner. The have always loved food from the egg but said the feel guilty always comming to our house. They have asked us to make the appatizers. Any ideas? I was thinking maybe scalops, wrapped in bacon (never done it before). I'm open to almost anything and love to impress our friends![p]Smokey

    Smokey,[p]Scallops on the egg are delicious. I've not wrapped them in bacon before, but what I did tasted fantastic (at least in the 2 people's opinions who ate them).
    Fire up the egg to nuclear temperatures--the hotter the better.
    While egg is heating, melt some butter in the microwave (just enough to cover the scallops) and add fresh dill. Marinate the scallops in the butter and dill while egg is heating. When hot enough (700 or above for me), put on a grill wok (with holes) and place scallops in there. Stir every 30 seconds or so until they are done--not long at all--no more than 5 minutes, and it may have been as short as 3 minutes (didn't keep track, just watched the scallops). Taste one to make sure they're done, and try to resist the urge to eat the rest (it'll be tough, unless you make a whole bunch).

    Wrap each scallop in 1/2 strip bacon and skewer with a toothpick. Mix lime juice, honey, tobasco, dill weed to taste. Pour mixture over scallops and refrigerate for 1/2-1 hour. Grill over med hot fire basting with reserved marinade.[p]Enjoy[p]Bob

    Smokey, are you cooking these ahead of time and then transporting? Bacon wrapped scallops and prosciutto wrapped shrimp are very good but, I think that most seafood appetizers need to be consumed fairly quickly. How close do your friends live from you.[p] I have prepared ABT's ahead of time and reheated in a oven or micro wave and they were still very good.
  • Smokey,[p]How about Jalapeno poppers? Cut Jalapeno's lengthwise, remove seeds and stuff with creamcheese, then wrap with bacon and grill.

    Smokey,[p]Now don't laugh, but have you heard about YB's bacon wrapped pickled watermelon rinds? From my experience, your guests will never forget them after they get done fighting over them.[p]K~G
