Well wish I was out of town with fellow Eggers this weekend but had to settle for a night in Hot Springs Ark. then graveyards the last two nights so I have been taking quick forum looks but no time to reply. Working tonight but did a quick cook b4 work. Actuall my wife did most of it. I just fired up the Egg and stablized it.

She took some above pic and didn't get "the raws" pic an I'm not sure what she put in it. Know Itilian sausage and ground chuck with shrooms but thats about all. Real easy as just browned the meats with saltaed garlic and onion added tomato sause with oragino and some other spices and cooked uncovered indirect on smoke rocks at 300 with a lot of presimmon wood for about 1 1/2 hours.

Made a quick tastie meal that I will be having for supper in a bit. Tomorrow pastromie and something else. Insperation hasn't hit just yet!

That looks really good! The pastrami will be awesome too. I did one on Saturday and it was gone in no time! I may have to take you up on getting some horseradish root.
