Blackened Tilapia

For what it's worth, this is how I do blackened fish.

I coat both sides with the desired amount of blackening seasoning. On the second side, I smear a layer of very soft butter.

I drop them in the hot CI skillet, butter side down and leave them for 3 minutes on the first side and then flip them for 2 minutes on the second side.

This is more bronzed than blackened, because I rushed the temp and only got to 600 before I started cooking, but it was PDG anyway!
