Try this little marinade I've been using lately. It's not so much for tenderizing meat as it is for adding flavor. This quantity is actually enough for a couple of chicken breasts - a little goes a long way. I doubled it for a real good flank steak. Even came good on salmon. Enjoy and have a great weekend![p]1 T lemon juice (fresh)
1 T olive oil
1 clove garlic, minced
1/4 cup tamari[p]That's it - part of its beauty is its simplicity.

Cornbread Willy, I go through a lot of chicken and flank steak so your marinade will be a nice addition to my growing collection. However, I have no idea what tamari is or where to buy it. Could you fill me in? Thanks!!! Mac

  • Sure - it's basically a cranked up soy sauce. It's in the grocery store in the Asian food section probably right smack dab between the soy sauce and the teriyaki sauce. In addition to the marinade, mixed with some rice wine vinegar, honey, ginger and chopped scallions it makes a real good dipping sauce for steamed dumplings (pot stickers). I'll post that recipe from home - I'm on kind of an asian kick right now.
