Monday night Fajitas...

I was all geeked up to do a different cook till someone started posting about fajitas around 2:00 yesterday. So...dinner got changed. Stopped by Fresh Mkt on the way home and picked up some fresh peppers, onions, tomatoes, Baby Bellas, jalapenos, lettuce, cheese, guac and sour cream. The skirt steak looked perfect, so the chicken already marinating at home got some competition. The wife and I had a little Reisling before dinner, but it was too sweet and so I wouldn't recommend it. The cold beer at dinner was just right though. Did it all on the small tonight, and those are double foiled jalapenos in the picture. They are so good roasted... Mom and Dad were a late addition as well, so glad I got the steak. Turned out very good. Thanks for the inspiration.




Sorry no plated pics...it is quite difficult to snap pictures when our main goal is to put together fajitas for 4 hungry boys under 10. I cannot imagine what our SAMS expenses will be in a few years. :unsure:

That looks good! and just be glad you have a Sam's, in a few years each one will bring home 3-4 friends that are just as hungry. and then you are screwed! My advice is don't cook for them after age 13 or 14 if they have friends... they are like homeless cats and they know when you will have food to feed them.... if they are all looking for a place to hang out for the day it will be your house.... so the 4 just became 16 -18 bottomless pits LOL get the picture. and friends last a long time.... when they come home from collage... can you get a second job now to start saving... the nice thing is you know everyone of their friends and who they are and what they are like and where they are
so I guess a pretty cheep price to pay when you look at it like that

Oh my...
I only have 2 eggs right now. Guess I need to start formulating a plan on how to get an XL past the back yard/ patio police. In fact, I need to get a landscape architect to come out and figure out the best look for my ultimate setup. (XL, LGE, Small) Our home is brick, and the patio is as well, but I would love a stacked stone look with an attached outdoor chimney. Something not too much different than this, but more Egg oriented.
I own my own business, so I cannot get another job. Gotta put the wife to work? I will let you tell her.
